Ingredients
- 100 g bulgur
- 1 pc. avocado
- 100 g pre-cooked beetroot
- 150 g cucumber
- 60 g cherry tomatoes
- 40 g lamb's lettuce
- 60 g feta cheese
- 100 g beetroot hummus
- 30 g walnuts
Preparation
- 1Prepare the bulgur according to package instructions and let it cool.
- 2Halve the avocado, remove the pit, scoop out the flesh with a spoon, and cut into cubes.
- 3Cut the beetroot and cucumber into fine cubes. Quarter the cherry tomatoes.
- 4Distribute the bulgur into bowls and arrange the lamb's lettuce on top. Add the prepared vegetable cubes and tomatoes. Crumble the feta cheese over it and add a generous dollop of beetroot hummus. Roughly chop the walnuts and garnish the salad with them. Enjoy your meal!
Tip
For a more intense aroma, you can briefly toast the walnuts in a dry pan.
