Ingredients
- 150g Edamame, blanched
- 1 Carrot
- 100g Red Cabbage
- ½ Cucumber
- 2 tbsp Roasted Peanuts
- A Handful of Fresh Cilantro
Ingredients for the Dressing
- 1 tbsp Soy Sauce
- 2 tbsp Peanut Butter
- 1 tbsp Lime Juice
- 1 tsp Honey (or Agave Nectar)
- 1 tbsp Sesame Oil
- 2 tbsp Water
Preparation
- 1Cut carrots into fine strips, finely shred red cabbage, thinly slice cucumber.
- 2In a bowl, mix peanut butter with soy sauce, lime juice, honey, sesame oil, and water until a smooth sauce forms.
- 3Place edamame, carrot, red cabbage, and cucumber in a large bowl.
- 4Pour dressing over and mix well.
- 5Roughly chop peanuts and cilantro and sprinkle over before serving.
