Preparation method

Heat the olive oil in a large pot over medium heat. Sauté the finely diced onions until translucent for approx. 5–6 minutes.

Meanwhile, wash the pork leg, pat it dry, and cut it into approx. 2 cm cubes.

Once the onions are ready, add the meat and sear for another 5–6 minutes. Then stir in tomato paste, paprika powder, finely grated garlic, salt, and pepper, and roast for 1 minute. Deglaze with vegetable broth and add the diced tomatoes. Cover the pot with a lid and let it simmer over low heat for 40–45 minutes, stirring occasionally. Add a little more broth if needed.

Chef's tip

Instead of pork leg, you can also use pork tenderloin – in this case, the cooking time will be reduced to about 20 minutes.
