Ingredients
- 300 g cooked brown rice
- 50 g yellow onion
- 1 garlic clove
- 1 red bell pepper
- 10 g jalapeño pepper
- 15 g fresh cilantro
- 15 ml extra virgin olive oil
- 250 g black beans (canned)
- 350 ml water
- 1 g fine table salt
- 1 g ground black pepper
Preparation
- 1Heat the olive oil in a large pan over medium heat. Add the finely chopped onion and sauté for about 3 minutes until soft. Then add the finely chopped garlic and sauté for another 20 seconds.
- 2Add the drained black beans and water (or bean liquid) to the pan. Increase the heat to medium-high and let everything simmer gently.
- 3Carefully stir in the already cooked brown rice and cook for about 2 minutes until all ingredients are well mixed and hot. Just before serving, fold in the chopped cilantro, diced bell pepper, and jalapeño. Season with salt and pepper.
