Ingredients

  • 300 g cooked brown rice
  • 50 g yellow onion
  • 1 garlic clove
  • 1 red bell pepper
  • 10 g jalapeño pepper
  • 15 g fresh cilantro
  • 15 ml extra virgin olive oil
  • 250 g black beans (canned)
  • 350 ml water
  • 1 g fine table salt
  • 1 g ground black pepper

Preparation

    Heat the olive oil in a large pan over medium heat. Add the finely chopped onion and sauté for about 3 minutes until soft. Then add the finely chopped garlic and sauté for another 20 seconds.

    Add the drained black beans and water (or bean liquid) to the pan. Increase the heat to medium-high and let everything simmer gently.

    Carefully stir in the already cooked brown rice and cook for about 2 minutes until all ingredients are well mixed and hot. Just before serving, fold in the chopped cilantro, diced bell pepper, and jalapeño. Season with salt and pepper.
