Ein wärmender Schatz der anatolischen Küche: Nohut Çorbası ist eine herzhafte türkische Kichererbsensuppe, die mit zarten Kichererbsen, feinen Möhren, fruchtigem Tomatenmark und aromatischem Kreuzkümmel gekocht wird. Ein Teil der Suppe wird cremig püriert, während ganze Kichererbsen für einen wunderbaren Biss sorgen. Das unvergleichliche Geschmackserlebnis entsteht durch die traditionell schäumende Gewürzbutter aus edelsüßem Paprikapulver, Chiliflocken und getrockneter oder frischer Minze sowie einem Spritzer frischer Zitrone. Ein herrlich sättigendes Wohlfühlessen für den goldenen Herbst!

Preparation & sautéing vegetables
Peel and finely dice the yellow onion and garlic cloves. Peel the carrots and cut into fine cubes. Drain the chickpeas in a colander, rinse thoroughly with cold water, and let drain.
Heat the olive oil in a large pot over medium heat. Sauté the onions and garlic until translucent, about 3 minutes. Add the diced carrots and sauté for another 2 minutes.
Stir in the tomato paste and ground cumin and roast gently, stirring constantly, for 1 minute until fragrant.
Chef's tip
For an even richer texture, you can refine the soup with a little tahini (sesame paste) – this adds a wonderfully nutty note.
Warm, toasted Turkish flatbread or pide is excellent served alongside for dipping.
