Preparation method

Preparation

1

Pat the pork belly dry and cut into approx. 2–3 cm cubes. Peel the potatoes and carrots and cut into bite-sized cubes. Wash, trim, and halve the green beans. Peel and finely chop the onion. Wash, quarter, and core the apples, then cut into wedges or chunky pieces.

Instructions

1

Heat the clarified butter in a large, heavy stew pot. Sear the pork belly cubes all over on medium-high heat for 6–8 minutes until golden brown. Add the chopped onion and sauté for 2–3 minutes until translucent.

2

Add the prepared potatoes, carrots, and green beans to the pot. Season with dried marjoram, salt, and freshly ground pepper. Pour in the hot vegetable broth so that the vegetables and meat are well covered. Bring to a boil, then reduce the heat, cover, and let simmer gently over low heat for about 25 minutes.

Chef's tip

Tart, firm apple varieties such as Boskoop or Elstar work particularly well, as they provide a wonderful fruity contrast to the savoury pork belly.

Like most traditional stews, Schnitz und Drunder tastes almost even better reheated the next day, once the flavours have thoroughly melded together.
