Ingredients
- 1 tbsp extra virgin olive oil
- 3 shallots
- 2 garlic cloves
- 200 g whole grain long-grain rice
- 1 carrot
- 150 g chicken breast ham
- 100 g frozen peas
- 1 pinch salt
- 1 pinch ground black pepper
- 1 l still water
Preparation
- 1Heat the olive oil in a large pot over medium heat. Finely chop the shallots and garlic and sauté for 1–2 minutes. Add the rice and toast for another 1–2 minutes.
- 2Pour in water, season with salt and pepper, and simmer with the lid closed for about 20–30 minutes until the rice is cooked. Add a little more water if needed.
- 3Meanwhile, coarsely grate the carrot and cut the chicken breast ham into small cubes.
- 4Once the rice is cooked, stir in the peas, ham, and carrots. Reduce the heat and let everything simmer together for another 2 minutes. Serve hot.
