Place the cooked jasmine rice, 3 of the eggs, and the whole wheat spelt flour into a tall container. Mix everything with an immersion blender until a smooth batter forms. Pour the batter into the waffle iron and bake the waffles for about 5 minutes until golden brown. This amount yields about 4 waffles (approx. 7 x 7 cm).

Meanwhile, gently mix the lamb's lettuce in a large bowl with salt, pepper, chili flakes, and lemon juice. Set aside. Heat a small pan and prepare the fourth egg as a fried egg (approx. 3–4 minutes over medium heat).
