Preparation method

Tear the kale into bite-sized pieces, drizzle with one teaspoon of rapeseed oil, lightly salt, and bake in the oven at 180 °C for about 7 minutes until crispy.

Meanwhile, cook the protein pasta in lightly salted water according to package directions.

For the dressing, whisk together yogurt, mayonnaise, and Dijon mustard in a small bowl until smooth. Season with salt and pepper to taste.

Chef's tip

For extra crunch, you can add some roasted sunflower seeds over the pasta.
