Preparation method
Bring plenty of salted water to a boil in a large pot. Cook the whole wheat spaghetti according to package directions (approx. 16–17 minutes) until al dente. Then drain.
Meanwhile, peel and finely dice the carrots, onions, and celeriac. Cut the Serrano ham into strips or small pieces as well. Heat the olive oil in a large pan over medium heat. Add the vegetables and ham and sauté everything for about 6–7 minutes.
Now add the white wine vinegar, tomato paste, and finely grated or pressed garlic. Sauté everything for another minute, stirring. Then add the diced tomatoes, chicken broth, salt, pepper, and oregano. Let the sauce simmer over medium heat for about 8–9 minutes until the vegetables are soft.
