Preparation method
Cut the bacon into small pieces and slowly render it in a pan over medium heat. Once golden brown and crispy, drain off the excess fat (leave approx. 1 tbsp in the pan). Let it cool down slightly.
Finely dice the red onions, add them to the bacon, and sauté until golden brown for approx. 8–10 minutes. Stir in cane sugar, maple syrup, balsamic glaze, mustard, and a pinch of pepper. Add chipotle sauce as desired. Let the mixture simmer over low heat until it reaches a sticky, jam-like consistency (approx. 10–15 minutes). Add a splash of water if needed.
Stir mayonnaise smooth with the remaining pepper and Worcestershire sauce. Let it rest for at least 10 minutes for the flavors to combine optimally.
