Fry the burger patties (or the vegan alternative) in a pan according to package instructions until cooked through and nicely browned on both sides. Set aside.
Lay the tortilla wraps flat on a cutting board. Using a knife, make a cut from the center of the tortilla straight down to the edge.
Imagine the tortilla divided into four quarters. Each quarter will now be topped differently: Place the cooked burger patty in the first quarter (to the left of the cut). Place a slice of cheddar in the second quarter. In the third quarter, spread the finely diced shallot, sliced pickled gherkins, and a few baby spinach leaves. Generously spread ketchup on the last quarter.
