  • 2 pcs Hamburger Buns
  • 390 g Ground Beef
  • 4 slices Cheddar Cheese
  • 150 g Bacon
  • 120 g Red Onion
  • 1 tbsp Cane Sugar
  • 1 tsp Maple Syrup
  • 1 tsp Balsamic Glaze
  • 1 tsp Mustard
  • 1 tsp Chipotle Sauce

    Cut the bacon into small pieces and slowly render it in a pan over medium heat. Once it's golden brown and crispy, drain the excess fat (leave about 1 tablespoon in the pan). Let it cool slightly.

    Finely dice the red onions, add them to the bacon, and sauté until golden brown for about 8–10 minutes. Stir in cane sugar, maple syrup, balsamic glaze, mustard, and a pinch of pepper. Add chipotle sauce as desired. Let the mixture simmer over low heat until it reaches a sticky, jam-like consistency (about 10–15 minutes). Add a splash of water if needed.

    Stir the mayonnaise smooth with the remaining pepper and Worcestershire sauce. Let it sit for at least 10 minutes for the flavors to combine optimally.

    Form the ground beef into 4 equally sized balls (approx. 95 g each). Heat a cast-iron pan or griddle very strongly. Place the meat balls onto the dry, hot surface and immediately press them flat (smash) with a sturdy spatula or burger press until they are about 1–1.5 cm thick. Fry for 2 minutes until a strong crust forms. Salt, pepper, flip, and immediately top each with a slice of cheddar. Let it melt. Toast the bun halves on the cut sides in a little butter until golden brown.

    Generously spread the bottom bun halves with pepper mayo. Place the meat patties with the melted cheese on top and spread 1–1.5 tablespoons of bacon jam on each. Also spread a little mayo on the top bun halves and assemble the burger.
