Preparation of the Fries

Preheat the oven to 200 °C. Line a baking sheet with parchment paper.

Peel celeriac, beetroot, and 320 g of the carrots and cut them into fry-like sticks. Place on the baking sheet, drizzle with 30 ml rapeseed oil, and salt. Mix well and bake at 195–200 °C for approx. 40–50 minutes.

Preparation of the Dip

In a small bowl, mix yogurt with mustard and finely chopped chives. Season with salt and pepper and let chill in the refrigerator until serving.
