Ingredients
- 500 g chicken breast fillet
- 50 ml coconut milk
- 1 package wooden skewers
- 1 tsp brown cane sugar
- 2.5 tbsp peanut butter
- 2 cloves garlic
- 1 tbsp sugar
- 1 piece ginger (fresh)
- 3 tbsp soy sauce
- 3 tbsp fish sauce
- 1 bunch fresh coriander
- 1 red chili pepper
Preparation
- 1Soak the wooden skewers in water for about 20 minutes to prevent them from burning during grilling.
- 2Cut the chicken breast fillet into uniform cubes and place in a bowl. Press the garlic, finely grate the ginger, and chop the coriander. Add everything together with the brown cane sugar, 2 tbsp fish sauce, and 2 tbsp soy sauce to the meat and mix well.
- 3Let the meat marinate for at least 30 minutes. Then thread the meat cubes onto the wooden skewers and cook in a pan or on the grill until golden brown on all sides.
- 4For the peanut sauce, put the coconut milk, peanut butter, the remaining sugar, 1 tbsp fish sauce, 1 tbsp soy sauce, a finely chopped chili pepper, and 40 ml water into a small saucepan. Bring everything to a boil while stirring and simmer for about 8 minutes until the sauce reaches the desired consistency.
