Grate the cheddar coarsely. Finely dice the red onion. Wash and clean the broccoli, then divide it into small florets.
Press or finely chop the garlic. Heat the olive oil in a large pot and sauté the onion and garlic until translucent. Deglaze with vegetable broth, whipping cream, and lemon juice.
Add the broccoli florets and uncooked pasta to the pot. Stir everything well and simmer over medium heat for about 10–15 minutes, stirring occasionally, until the pasta is al dente and the liquid is creamy. If necessary, add a splash of milk.
Chef's tip
For an extra crispy touch, you can sprinkle the pasta with some toasted pine nuts or breadcrumbs before serving.
