Mix flour with a pinch of salt in a bowl. Add the cold butter and work it in with your fingers or a pastry blender until the mixture resembles coarse crumbs.

Add one egg yolk (from one of the eggs) and 2-3 tablespoons of cold water. Quickly knead into a smooth dough. If the dough is too dry, add a little more water.

Form the dough into a ball, wrap in cling film, and let it rest in the refrigerator for 30 minutes.
Chef's tip
For a vegetarian version, simply omit the bacon and use more cheese or diced bell peppers instead.
Serve the quiche with a fresh green salad and a glass of dry white wine.
