Preheat the oven to 180–185 °C. Prepare a baking dish (approx. 20 cm × 27 cm).

Finely grate the potatoes and finely dice the tomatoes. Place both in a large bowl. Add ground turkey, whole wheat spelt flour, chopped basil, tomato paste, and salt and pepper, then mix everything well.

Line the bottom of the baking dish with a layer of lasagna sheets. Spread a portion of the meat-vegetable mixture over it and sprinkle with some Parmesan. Repeat the process until all ingredients are used up. The last layer should consist of the meat mixture and Parmesan.
