
Chicken Casserole with Broccoli and Rice

Preparation method
Preheat the oven to 200 °C top/bottom heat and prepare a suitable baking dish (approx. 40 cm × 25 cm).
Cut the chicken breast fillet into bite-sized pieces and finely dice the onions. Place both in the baking dish, drizzle with olive oil, and season with paprika powder, salt, and pepper. Mix everything well so that the meat is evenly coated with the spices. Pre-bake in the preheated oven for 10 minutes at 200 °C.
Remove the dish from the oven. Add the already cooked rice and diced dried tomatoes and mix with the meat. Divide the broccoli into small florets, spread them over the rice-meat mixture, and press down lightly. Sprinkle generously with grated Cheddar. Reduce the temperature to 180 °C and bake the casserole for another 15–20 minutes until the cheese is melted and lightly browned.
Chef's tip
You can also use whole grain rice to increase the fiber content. Make sure the rice is already cooked before adding it to the casserole.
