Preparation method

First, cook the pasta: Bring enough water to a boil in a large pot, salt it, and cook the pasta al dente according to package instructions (approx. 8–10 minutes).

Preheat the oven to 180 °C. Line a baking dish (approx. 40 cm × 40 cm) with baking paper.

Meanwhile, coarsely grate the zucchini, finely dice the onions, and chop the parsley. Whisk the eggs in a large bowl. Stir in the zucchini, onions, and parsley. Season the mixture generously with chili flakes, paprika powder, salt, and pepper.

Chef's tip

Serve the frittata with a dollop of basil pesto for an extra Mediterranean aroma.
