Preheat the oven to 190 °C top/bottom heat (170 °C fan). Thoroughly grease a large baking dish with 10 g of the unsalted butter.

Peel the potatoes and slice them into approx. 2 to 3 mm thin slices using a mandoline or a sharp knife. Wash, peel, and quarter the pears, remove the core, and slice them into approx. 3 mm thin wedges as well.

Peel the garlic clove and mince it very finely. Strip the leaves from the thyme sprigs.

Chef's tip

Firm pear varieties such as Conference or Williams Christ are particularly suitable for the gratin, as they retain their shape during baking and develop a delicate aroma.

For an even heartier version, you can distribute 80 g of crispy fried bacon between the layers.
