
Quiche with Goat Cheese, Figs, and Almonds

Preparation method
Prepare the Dough
First, prepare the dough for the quiche. Mix the flour with the cold butter, cut into small pieces, until a crumbly mixture forms. Add a pinch of salt and knead in the ice-cold water until a smooth dough is formed. Wrap the dough in cling film and let it rest in the refrigerator for at least one hour.
Prepare the Filling
Finely dice the onions and sauté them in a pan with sunflower oil until golden brown. Then let them cool. Mix the cooled onions with the eggs, finely chopped mint, 2 tablespoons of the almond flakes, and the fresh goat cheese (set aside a small portion of the cheese for garnish). Season with salt.
Bake and Serve
Preheat the oven to 180 °C. Roll out the dough thinly on a floured surface and line a round baking dish (approx. 25 cm diameter) with it. Prick the bottom several times with a fork and blind bake in the preheated oven for approx. 20 minutes.
