- 150 g wheat flour Type 405
- 120 g unsalted butter
- 45 ml still water
- 1 pinch table salt
- 125 g goat cream cheese
- 160 g red onions
- 160 g fresh figs
- 2 eggs size M
- 5 g fresh mint
- 30 g blanched almond flakes
- 10 ml sunflower oil
Dough Preparation
First, prepare the dough for the quiche. Mix the flour with the cold butter, cut into small pieces, until a crumbly mixture forms. Add a pinch of salt and stir in the ice-cold water. Knead into a smooth dough and let it rest in the refrigerator for at least one hour.
Filling Preparation
Finely dice the onions and fry them in sunflower oil until golden brown. Then let them cool. Mix the eggs, chopped mint, 2 tablespoons of the almond flakes, and most of the goat cream cheese (reserve some for garnish) with the onions and season with salt.
Baking and Serving
Roll out the dough thinly and line a round baking dish (approx. 25 cm diameter) with it. Prick the bottom several times with a fork and blind bake in the preheated oven at 180 °C for 20 minutes. Then add the prepared filling, slice the figs and distribute them on top. Sprinkle with the remaining almonds and goat cheese pieces. Bake the quiche for another 35-40 minutes at 180 °C until golden brown.
