
Hearty Potato and Minced Meat Casserole with Soy

Preparation method
In a large pot, bring 1 liter of water to a boil with 2 tsp oregano, 2 tsp basil, and 1 tsp salt. Once the water boils, add the soy granules, reduce the heat to medium, and simmer for about 10 minutes until soft.
Meanwhile, peel the potatoes and cut them into thin slices. Preheat the oven to 200 °C top/bottom heat and line a casserole dish (Ø approx. 25 cm) with baking paper.
Drain the cooked soy granules and briefly chop them in a blender to achieve a finer consistency while still retaining some texture (not a paste). Transfer the soy to a large bowl and mix with the minced beef, tomato paste, chopped tomatoes, the remaining oregano and basil, paprika powder, and the finely chopped spring onions. Season generously with salt and pepper.
