Preheat the oven to 185–190 °C. Prepare a suitable baking dish (approx. 30 cm x 40 cm).

Peel carrots and onion. Dice them along with the zucchini and celery. In a large bowl, mix the diced vegetables with the pre-cooked jasmine rice, lemon zest, finely grated Parmesan, milk, spelt flour, thyme leaves, drained tuna, and olive oil. Season with salt and pepper.

Spread the mixture evenly into the baking dish and bake in the preheated oven at 185–190 °C for about 50–55 minutes, until the surface is lightly browned.

Chef's tip

For an extra crispy crust, you can sprinkle some additional Parmesan over the casserole at the end of the baking time.
