Ingredients
- 8 slices of day-old ciabatta or baguette
- 200 g feta, crumbled
- 100 g grated mozzarella or cheddar cheese
- 200 g cherry tomatoes, halved
- 100 g black olives, pitted and sliced
- 1 small zucchini, thinly sliced
- 1 red onion, finely diced
- 2 garlic cloves, finely chopped
- 6 eggs
- 300 ml whole milk 3.5% fat
- 1 tbsp dried oregano
Pantry
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- 1 pinch ground black pepper
Preparation
- 1Cut the bread into approx. 2 cm cubes and set aside.
- 2Heat the olive oil in a pan over medium heat. Sauté the diced red onion and garlic until translucent. Add the zucchini slices and fry for a few minutes until slightly soft. Remove from heat and let cool briefly.
Mix & Soak
- 1In a large bowl, combine the bread cubes with the halved cherry tomatoes, olives, crumbled feta, and grated cheese. Add the cooled onion-zucchini mixture and dried oregano. Season with salt and pepper.
- 2In a separate bowl, whisk the eggs with the milk and season generously with salt and pepper. Pour the egg-milk mixture over the bread mixture and mix thoroughly so that the bread can absorb the liquid well. Let the mixture rest for about 10 minutes.
Baking
- 1Preheat the oven to 180 °C top/bottom heat. Grease a baking dish (approx. 20x30 cm) and fill it with the prepared mixture. Bake in the preheated oven for approx. 35–40 minutes until the strata is golden brown and crispy. Let rest for 5–10 minutes before serving.
Tip
For an even richer version, you can replace the milk with cream or add diced ham.
