Salad Ingredients

  • 200 g watermelon
  • 150 g cucumber
  • 80 g feta
  • 1 handful fresh basil
  • 1 handful fresh mint

Dressing

  • 2 tbsp extra virgin olive oil
  • 1 tsp liquid honey
  • 1 tbsp lime juice

Preparation

    Cut the watermelon into bite-sized cubes. Dice the cucumber or cut it into fine slices. Crumble the feta roughly with your hands.

    Wash basil and mint, shake dry, and roughly chop or pluck the leaves. Place all prepared ingredients in a large bowl.

    For the dressing, vigorously whisk olive oil, honey, and lime juice in a small bowl until a creamy emulsion forms.

    Pour the dressing over the salad, gently mix everything, and serve immediately. Garnish with some fresh pepper as desired.
Tip
For a particularly intense aroma, you can let the salad sit in the refrigerator for 10 minutes before serving.
Additionally garnish the salad with toasted pine nuts for a delicate crunch.
