Salad Ingredients
- 200 g watermelon
- 150 g cucumber
- 80 g feta
- 1 handful fresh basil
- 1 handful fresh mint
Dressing
- 2 tbsp extra virgin olive oil
- 1 tsp liquid honey
- 1 tbsp lime juice
Preparation
- 1Cut the watermelon into bite-sized cubes. Dice the cucumber or cut it into fine slices. Crumble the feta roughly with your hands.
- 2Wash basil and mint, shake dry, and roughly chop or pluck the leaves. Place all prepared ingredients in a large bowl.
- 3For the dressing, vigorously whisk olive oil, honey, and lime juice in a small bowl until a creamy emulsion forms.
- 4Pour the dressing over the salad, gently mix everything, and serve immediately. Garnish with some fresh pepper as desired.
Tip
For a particularly intense aroma, you can let the salad sit in the refrigerator for 10 minutes before serving.
Additionally garnish the salad with toasted pine nuts for a delicate crunch.
