Dieses klassische Schalotten-Dressing ist die perfekte Ergänzung für jeden frischen Salat. Die feine Emulsion aus Schalotten, Rotweinessig und hochwertigem Olivenöl besticht durch ihre ausgewogene Balance zwischen Säure und dezenter Süße. Ein bleskschnelles Rezept, das in nur 10 Minuten zubereitet ist und jedem Salat eine französische Note verleiht.

  • 80 g shallots
  • 70 ml red wine vinegar
  • 40 g white sugar / granulated sugar
  • 7 g salt
  • 80 g extra virgin olive oil

Peel and very finely dice the shallots. Place two-thirds of the diced shallots in a tall, narrow container. Add the red wine vinegar, 100 ml of water, sugar, and salt, and blend briefly with a hand blender.

Slowly pour in the olive oil while blending continuously until a creamy emulsion forms. Finally, stir in the remaining diced shallots. Chill the dressing in the refrigerator before serving.

Chef's tip

The dressing goes wonderfully with leafy salads, tomato salad, or as a marinade for grilled vegetables. It keeps in a sealed jar in the refrigerator for about 3-4 days.
