Preparation method
Wash the turkey breast, pat dry, and season with salt and pepper. Fry in a pan or grill for about 8-10 minutes per side until golden brown and cooked through. Let the meat cool, then cut into fine strips.
Meanwhile, wash and clean the celery stalks and cut them into fine slices. Core the apples, dice them, and immediately drizzle with half of the lemon juice to prevent browning. Halve the grapes. Melt the cane sugar with a splash of water in a pan and briefly caramelize the walnuts in it. Let cool on baking paper.
For the dressing, whisk mayonnaise, sour cream, and the remaining lemon juice until smooth in a small bowl. Season with salt and pepper.
Chef's tip
For an even more intense aroma, you can briefly toast the pecans in a dry pan beforehand.
