Peel the garlic cloves and shallots and cut them into very fine cubes. Wash the basil leaves, carefully pat them dry, and roughly chop them.

Place garlic, shallots, basil, lemon juice, apple cider vinegar, and extra virgin olive oil into a blender.

Blend everything into a homogeneous vinaigrette. Season with salt and freshly ground white pepper and stir briefly again.

Chef's tip

The vinaigrette tastes best if it has steeped for at least 30 minutes. It will keep in the refrigerator for about 3-5 days.
