Ingredients overview
- 3 slices toast bread
- 200 g turkey breast fillet
- 2 slices breakfast bacon
- 1 egg
- 2 tbsp mayonnaise
- 2 slices sliced cheese
- 3-4 slices tomatoes
- 2 leaves iceberg lettuce
- 1 tsp olive oil spray
- 1 tbsp extra virgin olive oil
- 1 pinch chicken seasoning
- 1 pinch fine salt
- 1 pinch black ground pepper
Preheat the oven to 160 °C. Cut the turkey breast fillet into 2-3 evenly thick pieces. Season with chicken seasoning and salt. Sear in an oven-safe pan with olive oil for 3-4 minutes until golden brown on both sides. Place the pan in the oven for about 10 minutes until the meat is cooked through. Then remove and let it rest briefly.
Meanwhile, spray the toast slices with olive oil spray and toast them in a pan or toaster until golden brown. Fry the breakfast bacon in a pan without additional fat until crispy. Fry the fried egg in the rendered bacon fat. Slice the turkey breast and tomatoes into thin slices.
Layer the sandwich as follows: toast slice, mayonnaise, bacon, turkey breast, tomatoes, mayonnaise, second toast slice, mayonnaise, lettuce, tomatoes, fried egg, mayonnaise, and the third toast slice as the top. Halve the sandwich diagonally and secure with wooden skewers.
