Ein badischer Klassiker der traditionellen Sommerküche: Saftige Sauerkirschen treffen auf eingeweichte Brötchen, feine Mandelblättchen und einen Hauch von Zimt, goldbraun im Ofen gebacken.

Cut the stale bread rolls into approx. 1–2 cm cubes and place them in a large bowl. Warm the whole milk until lukewarm, pour over the bread cubes, and let soak for about 15 minutes.
Drain the sour cherries thoroughly in a sieve. Preheat the oven to 180 °C top/bottom heat (160 °C fan oven) and grease a baking dish with a little butter.
Preparation & baking
Separate the eggs. Whip the egg whites with a pinch of salt until stiff. Beat the softened butter together with the sugar and vanilla sugar using a mixer until creamy. Stir in the egg yolks one by one until light and fluffy. Add the ground cinnamon.
Chef's tip
For an even more aromatic touch, the sour cherries can be marinated with a splash of Kirsch before stirring in.
Instead of bread rolls, stale brioche or sweet braided bread is also ideal for an especially juicy and fluffy result.
