Preparation
Pat the chicken breast fillets dry with paper towels and cut into bite-sized pieces. Wash, quarter, and core the apples, then cut into wedges about 1 cm thick. Peel and finely dice the shallots and garlic cloves. Roughly chop the walnut kernels. Strip the thyme leaves from the sprigs. Rinse the lemon with hot water and squeeze the juice from half a lemon.
Instructions
Heat a large skillet and toast the chopped walnut kernels without oil over medium heat for 2 minutes until fragrant. Then transfer to a small plate and set aside.
Heat 1 tbsp of extra virgin olive oil in the hot skillet. Add the chicken breast pieces, season with fine table salt and ground black pepper, and sear over high heat for 4-5 minutes on all sides until golden brown. Remove the chicken from the skillet, cover, and let it rest briefly.
Chef's tip
For this dish, use tart, aromatic apple varieties such as Elstar, Boskoop, or Braeburn – their delicate acidity harmonizes wonderfully with the sweetness of the honey and the salty feta.
If you like, you can sprinkle some freshly grated lemon zest over the dish at the very end to further enhance the Mediterranean freshness.
