Sift the flour into a bowl. Add salt, powdered sugar, ground vanilla, baking powder, and baking soda and mix everything well.

In a second bowl, whisk together cream yogurt, kefir, milk, melted butter, and eggs until smooth. Add the liquid mixture to the flour mixture.

Whisk everything together with a whisk to form a smooth batter. Finally, carefully fold in the lemon zest and fresh blueberries.

The pancakes also taste excellent cold and are an ideal healthy snack for on the go or for lunchboxes.
