- 240 g rolled oats
- 3 ripe bananas
- 6 eggs
- 30 g soft butter
- 1 tbsp vegetable oil for greasing the pan
- 150 g fresh berries of choice
- 150 g natural yogurt
- 30 ml maple syrup
- 1 tsp powdered sugar for dusting
- 1 handful fresh mint leaves for decoration
Batter Preparation
Finely mash the bananas in a bowl with a fork. Add the oats, eggs, and soft butter, then mix everything into a smooth batter.
Frying the Pancakes
Grease a pan with a little vegetable oil and heat it. Place a large spoon of batter into the pan for each pancake and form small pancakes (approx. 8–10 cm diameter). Fry until golden brown on both sides over medium heat.
Arranging and Serving
Arrange the pancakes with fresh berries and a dollop of natural yogurt. Drizzle with maple syrup, lightly dust with powdered sugar, and garnish with fresh mint leaves.
Chef's tip
For an extra fine texture, you can briefly grind the oats in a blender beforehand.
