  • 5 g fresh chives
  • 3 leaves fresh mint
  • 5 g fresh basil
  • 200 g cucumber (approx. 1 small cucumber)
  • 100 g goat cream cheese (natural)
  • 100 g low-fat quark
  • 160 g wholemeal toast bread (8 slices)

  • 1 pinch salt
  • 1 pinch black pepper

Preparation

Finely chop chives, mint, and basil. Wash the cucumber (peel if desired) and slice it very thinly.

Preparing the Cream

In a small bowl, stir the goat cream cheese with the low-fat quark until smooth. Fold in the chopped herbs and season the cream with a pinch of salt and pepper.

Serving

Spread four slices of wholemeal toast bread evenly with the herb cream. Arrange the cucumber slices in a fan shape on top. Cover with the remaining four slices of toast. Halve the sandwiches diagonally and serve immediately.

Chef's tip

For extra crispiness, you can lightly toast the bread in a toaster before spreading.

Briefly drain the cucumber slices on kitchen paper before assembling to prevent the sandwich from becoming soggy.
