Preparation of the Pancakes

Whisk all ingredients for the batter with a whisk until smooth but quite liquid. Then let the batter rest in the refrigerator for about 30 minutes.

Heat a drop of oil in a coated pan and fry the pancakes until golden brown on both sides.
Filling and Serving

Spread some cream cheese on the cooled pancake as desired. First, top it with the cheese slices (leaving the edge a little free), then add the mortadella, and finally the tomatoes and arugula. The cheese should always come first so that it seals the roll well when heated later.
Chef's tip
For a vegetarian version, you can simply omit the mortadella or replace it with grilled vegetables.
The pancake rolls can be perfectly prepared the evening before and are ideal for lunchboxes.
