Preparation method
Place the eggs in a small pot, cover with water, and bring to a boil. Reduce heat and hard-boil the eggs for approx. 8–10 minutes. Afterwards, rinse under cold water, peel, and coarsely grate.
Meanwhile, peel the celeriac and grate finely. Wash the apple and coarsely grate it with the skin on. Immediately mix the celery with a little lemon juice to prevent it from turning brown.
In a medium bowl, thoroughly mix the grated celery, apple, eggs, cream cheese, Dijon mustard, and the remaining lemon juice.
Chef's tip
Serve the spread best on fresh sourdough bread or whole grain pastries. For an extra fresh touch, you can garnish it with finely chopped chives.
