Soak the glass noodles in lukewarm water for 5 to 7 minutes, then drain and roughly cut in half using kitchen shears.
Peel the garlic cloves and lightly crush them. Cut the ginger into thin slices. Trim the spring onions and cut into approx. 4 cm pieces. Finely chop the coriander stems and set aside the coriander leaves for garnish.
For the aromatic seasoning sauce, thoroughly mix the oyster sauce, soy sauce, fish sauce, sesame oil, brown cane sugar, crushed black peppercorns, and vegetable stock in a bowl.
Chef's tip
Traditionally, Goong Ob Woonsen is prepared in a clay pot. A cast-iron pot or heavy pan with a tight-fitting lid is just as perfect for home cooking.
For an extra fresh kick, the dish can be drizzled with a little fresh lime juice at the table.
