Preparation
First, preheat the grill thoroughly.
Wash the trout, pat dry, and make 3 incisions on each side of the fish with a sharp knife. Cut the lemon into 6 slices and stuff them into the belly cavity along with thyme and rosemary. Season the trout with salt and pepper and brush with olive oil. Place the prepared trout on the grill and grill intensely for 4–5 minutes on each side. After turning, close the grill and finish cooking the fish.
Meanwhile, prepare the salad: Peel the avocado, cut it into small cubes, and place it in a bowl with lemon zest and juice, basil, spring onions, salt, and pepper. Mix everything well and serve with the grilled trout.
Chef's tip
If you are unsure about grilling fish directly on the grate, we recommend using a fish grill basket, which makes turning easier.
