  • 250 g Indian Curry Sauce (Goan Style)
  • 1 tbsp vegetable oil
  • 250 g fish fillet or shrimp
  • 1 handful fresh coriander
  • 100 ml coconut milk

Cut the fish or shrimp into bite-sized pieces. Heat 1 tbsp vegetable oil in a pan and sear the fish or shrimp until golden brown.

Add the Indian curry sauce and simmer everything together for about 3-4 minutes until the fish is cooked through.

Refine with a splash of coconut milk and serve garnished with freshly chopped coriander. Basmati rice is the best accompaniment.

Chef's tip

For an extra fruity note, you can add a few splashes of fresh lime juice over the finished curry.
