Place the couscous in a bowl, pour 200 ml of boiling water over it and salt lightly. Let it swell, covered.

Wash the zucchini and cut into small cubes. Also deseed and dice the tomato. Finely chop the red onion, slice the garlic thinly. Deseed and finely chop the chili pepper as desired.

Heat one tablespoon of sunflower oil in a pan. Briefly sauté the onion, zucchini, garlic, and chili. Then fold the vegetables into the prepared couscous. Add the diced tomatoes and chopped parsley. Season with lime juice, olive oil, salt, and pepper.
