Dice the onion, avocado, mango, tomatoes and mozzarella and mix in a bowl. Season to taste with 2 tbsp lime juice, salt and pepper. Wash the rocket, shake dry and fold into the salsa.

Mix the honey, a pinch of chilli powder and 1⁄4 tsp salt together. Rinse the salmon, pat dry and brush with the honey mixture.

Heat the butter in a pan, fry the salmon for approx. 2 minutes on each side and drizzle with the remaining lime juice.
