Cook the jasmine rice in lightly salted water according to the package instructions for about 12–15 minutes until done, then keep warm covered.
Wash, trim, and cut the green beans into pieces about 3–4 cm long. Blanch the bean pieces in boiling salted water for approx. 2–3 minutes, plunge immediately into ice-cold water, and drain well – this keeps them wonderfully crisp and bright green.
Rinse the prawns and pat dry with paper towels. Peel and finely chop the garlic. Deseed the chilli pepper and cut into thin strips. Remove the thick central vein from the kaffir lime leaves and slice the leaves into paper-thin strips.
Chef's tip
Blanching for the perfect bite: Briefly precooking and shocking the beans in ice water ensures the characteristic crispness and vibrant green colour in the finished dish.
Aroma of the kaffir lime leaves: Roll the destemmed leaves tightly together and slice them into paper-thin strips using a sharp knife. They give the dry curry its distinctive citrus aroma.
