In a small bowl, mix the olive oil with the wholegrain mustard and lime juice. Finely chop the herbs (lemon thyme, sage, parsley) and the chili pepper and stir into the marinade. Season with salt and pepper.

Wash the mackerel fillets, pat them dry, and generously rub them with the herb-mustard mixture.

Heat a pan over medium heat. First, sear the fish fillets on the skin side for about 2 minutes. Then carefully flip them and cook for another 2 minutes on the other side until the fish is cooked through and the crust is golden brown. Adjust cooking time depending on the thickness of the fillets.
