Preparation & Potato Bed

1

Preheat the oven to 190 °C top/bottom heat. Thoroughly wash, peel, and slice or shave the waxy potatoes into approx. 3–4 mm thin slices. Peel the yellow onion, cut in half, and cut into fine half-rings. Peel 2 of the garlic cloves and cut into thin slices.

2

Grease a large baking dish or a deep baking tray with 1 tbsp olive oil. Arrange the potato slices, onion half-rings, and garlic slices in a fan-like pattern. Season with half of the fine sea salt, a pinch of black pepper, and the smoked paprika. Drizzle with 2 more tbsp olive oil and evenly pour in the dry white wine.

3

Place the dish in the preheated oven and pre-cook the bed of potatoes for approx. 25 minutes until the potato slices become soft and the onions smell sweet.

Chef's tip

Monkfish has firm, boneless meat with a delicate lobster note. As it hardly falls apart when baked, it is the ideal prime fish for oven dishes. Make sure not to overcook it – 12 to 15 minutes is ideal for a juicy bite.

Pre-cooking the bed of potatoes with onions and white wine is the secret to authentic Patatas Panaderas: this allows the potatoes to soak up the flavours and turn butter-soft, while the fish then only needs to cook briefly to perfection.
