If you are using leftover pasta, bring it to room temperature. If you are preparing fresh pasta, cook it al dente according to the package instructions and then let it cool.

In a large bowl, whisk the eggs with the grated Parmesan. Add the diced mozzarella, ham (if using), and finely chopped onion. Fold the cooked pasta into the egg mixture and mix everything well until the ingredients are evenly distributed. Season with salt and pepper.

Frying & Serving

Heat the olive oil in a medium, non-stick pan over medium heat. Pour the pasta-egg mixture into the pan and spread it evenly. Fry the frittata for about 5–7 minutes until the bottom is golden brown and the top begins to set.
