Ingredients
- 200 g jasmine rice (cooked)
- 70 g carrots (approx. 1 medium carrot)
- 80 g yellow onion (approx. 1 medium onion)
- 3 cloves garlic
- 30 g leek (or spring onions)
- 40 g frozen peas
- 30 g rapeseed oil (approx. 2 tbsp)
- 2 eggs (size M)
- 30 g soy sauce (approx. 2 tbsp)
- 1 pinch salt
- 1 pinch black pepper (ground)
Preparation
- 1First, peel the carrots and cut them into small cubes (about the size of the peas). Peel and finely dice the onion. Peel and roughly chop the garlic. Wash the leek thoroughly and cut it into fine rings.
Instructions
- 1Heat a large coated pan or wok over high heat and add 1 tbsp rapeseed oil. Sauté the onions and garlic in it for about 60–90 seconds until fragrant. Immediately add the cooked rice and fry everything for another 8–10 minutes over medium to high heat, turning occasionally, until the rice is almost crispy but not burnt.
- 2Now add the carrot cubes, leek, and peas to the pan. Fry everything for 1 minute over high heat. Push the rice mixture to the side of the pan. Add 1 tbsp rapeseed oil to the empty space, crack in the eggs, and add 1 tbsp soy sauce. Scramble the eggs directly in the pan and fry for 2–3 minutes until almost dry. Then mix the scrambled eggs with the rest of the rice mixture. Stir in the remaining soy sauce (1 tbsp) and fry everything for another 1–2 minutes over high heat.
Serving
- 1Remove the pan from the heat. Season the fried rice with salt and pepper to taste and serve immediately. Garnish with sesame seeds or fresh herbs as desired.
Tip
For a particularly authentic aroma, you can sprinkle the rice with some white sesame seeds, chili flakes, and fresh parsley or cilantro before serving.
Knuspr-Küche
Tipp: Verwende am besten Reis vom Vortag. Kalter Reis ist trockener und lässt sich viel besser anbraten, ohne matschig zu werden. So wird dein gebratener Reis perfekt knusprig!
