- 200 g whole wheat penne
- 1 tbsp extra virgin olive oil
- 80 g yellow onion (diced)
- 3 cloves garlic (finely chopped)
- 100 g fresh tomatoes (diced)
- 250 g tuna in its own juice (drained)
- 240 g canned diced tomatoes
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 20 g Parmesan (finely grated)
- 1 handful fresh chives (finely chopped)
- 100 g light mozzarella (torn)
- 1 pinch salt
- 1 pinch black pepper

Bring plenty of salted water to a boil in a large pot. Cook the whole wheat penne in it for approx. 15–16 minutes (or according to package instructions) until al dente. Then drain.

Meanwhile, heat olive oil in a large pan over medium heat. Sauté onion, garlic, and fresh tomatoes for 2–3 minutes. Reduce heat, add tuna, diced tomatoes, lemon juice, salt, pepper, oregano, and Parmesan. Simmer for about 10 minutes, stirring occasionally.

Add the cooked pasta to the sauce in the pan and mix well. Distribute onto plates, sprinkle with fresh chives and mozzarella, and serve immediately.
