Soak the wooden skewers in cold water for about 10 minutes so they do not burn during frying later.
Cut the skinless chicken breast fillet into bite-sized cubes, approx. 2–3 cm in size. Peel the yellow onion and cut into pieces of the same size. Season the chicken meat with fine table salt and ground black pepper.
Alternately thread the chicken pieces and onion pieces onto the wooden skewers (about 3–4 pieces of meat and onion per skewer).
Chef's tip
In Osaka, the legendary street food rule for kushikatsu is: never double dip ("No double dipping")! It is best to serve the aromatic sauce in individual small bowls for each guest.
Japanese panko breadcrumbs ensure an incomparably crispy, light crust. If desired, thinly shredded white cabbage and some Japanese mayonnaise make the perfect side dish.
